Today I would like to share this great recipe with you for spelt flour biscuits with cheddar cheese and garlic butter on the top.  A long time ago before I had to worry about what I ate so much one of my favorite places to eat was Red Lobster. I loved the biscuits that they have there – they are so good. When I had to  start watching what I eat more carefully this was one of the things I missed eating the most. I was happy to get a recipe that could be adapted to be eaten and taste just as a good as I remember. This recipe is very similar if not better than the ones I found at Red Lobster. They are especially good if you eat them warm, the perfect consistency and melts in your mouth! I hope you can enjoy this recipe!

Spelt Flour Biscuits with Cheddar Cheese and Garlic Butter

Ingredients
  • 2 cups spelt flour
  • 1 tablespoon baking powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon Real Salt
  • 2 tablespoons coconut oil
  • 3 tablespoons butter, cold
  • 1 cup buttermilk (or put 1 Tbl. vinegar in a cup then fill with milk)
  • 1¼ cups grated sharp cheddar cheese
Instructions
  1. Preheat oven to 425 degrees.
  2. In a medium bowl, combine flour, baking powder, garlic powder and salt.
  3. Cut in coconut oil and butter until coarse crumbs are formed.
  4. Lightly mix in grated cheese.
  5. Mix in buttermilk just until moist (dry spots here and there are ok – the biscuits will be tough if they are overmixed).
  6. Drop the biscuits onto a greased or lined baking sheet.
  7. Bake for 12-14 minutes, until browned and golden.
  8. While the biscuits are baking, in a small bowl combine three tablespoons melted butter, ¼ teaspoon dried parsley flakes, ¾ teaspoon garlic powder and a pinch of salt.
  9. Right when the biscuits come out of the oven, brush the butter/herb mixture over the biscuits evenly (alternately, you can dip the top of the biscuit into the butter mixture).
  10. Serve immediately.

    This recipe sounds delicious. I will definitely be trying it out. I think I’ll use fresh garlic & parsley as I find the dried stuff gives me a sore throat.
