This salad has a base of super greens and is topped with a sweet, tangy, and slightly savory citrus dressing that just seems to compliment all of the flavors perfectly. It is a beautiful salad bursting with nutritional goodness!

For the Salad

  • 1 cup chopped brussel sprouts
  • 1 cup chopped kale
  • 1 cup chopped cabbage
  • 1 cup broccoli slaw
  • 1 large apple, chopped
  • 1/3 cup craisins
  • 1/3 cup pecans

For the Dressing

  • 1 tsp orange zest
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1/4 cup olive oil
  • 3 Tbsp Greek yogurt
  • 2 Tbsp water
  • 1 1/2 Tbsp pure maple syrup *
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder

  1. Toss together all of the salad ingredients (you can buy some of the ingredients pre-chopped, or I find the easiest way to chop them is a mandoline or food processor)
  2. Add all of the ingredients for the dressing to a mini food processor or blender and blend until smooth
  3. Add dressing to salad and toss until well coated (add the dressing slowly until desired amount is reached)

You could substitute all the greens with a bagged, pre-cut chopped salad. There is one at Costco with Brussel sprouts and kale and it’s quite similar to this. I usually just throw out the dressing packet it comes with because it’s full of junk but you may want to keep it. Even by throwing out the dressing packet, it’s still way more salad for a lot less money than the package salad packets at a normal grocery store.
