It is hard to find gluten-free chicken soup recipes because so many soup recipes have pasta in them or are thickened with wheat flour – and they certainly are not gluten-free.
I like my soups to be a meal, not just a side dish. I want some meat or beans or something in there to fill me up. Many soup recipes are just veggies which is fine, it’s just not my preference. I have to eat a low carb diet because I have problems keeping my blood sugar high enough.
