Almond flour is carb free because it is made from a nut instead of a grain. It is really easy to cook with. It’s probably the most used Keto flour available. You can buy it but it is possible to make your own by blending regular almonds in a high powered blender (see below).
Is Almond Flour Keto?
Since it is just ground almonds, it has the nutrition of almonds. So 6 grams of carbs and 3 grams of fiber, which is 3 net carbs per serving. You may be surprised at how many carbs they actually have. It’s really not a TON but you do need to be careful to not eat too much. But other than that, it is an excellent choice on the Keto diet and is one of the most popular low carb flours.
Almond flour is blanched (skin removed), ground almonds. That’s it. Almond meal is ground almonds with the skins left on and is a bit coarser.
The flour is best for baking, since it’s lighter in texture and color and will make your food smoother and fluffier. Almond meal is usually a little cheaper, so use it for things like breading. The finer the almonds are ground, the better your baked goods will turn out.

I haven’t been able to figure out how to easily make my own almond flour because of the whole blanching thing, but I would love to know if anyone has any ideas on how to do that.

I’ve wasted a lot of almond flour because it went bad. Once opened, it will keep for a month in the refrigerator and 6 to 8 months in the freezer. If you store it in the freezer, just remove the portion you need for your recipe and let it come to room temperature for 20 minutes.
Flour vs. Meal
If you’re wondering there is a difference between almond meal and almond flour, almond meal is not blended or ground as much so it has a rougher texture. The other difference is almond meal is made with the outside peeling left one so you’ll see little pieces of brown in it. Almond flour has a much finer texture and it what you want to use in making any of these recipes unless otherwise specified.
