I think it would be good with some chicken added or on the side. It has a tender yet firm texture like great risotto rice is supposed to have.

I have 9 of the best ever Mashed Cauliflower Keto Recipes. Who knew there are so many different ways to make cauliflower mashed potatoes? I didn’t, did you? Cauliflower is quickly becoming a very popular replacement for potatoes and rice. That is for anyone that wants to eat low carb, Paleo or Keto.
People miss eating mashed potatoes and so Mashed Cauliflower Keto Recipes were invented. They are delicious and taste and look quite similar to mashed potatoes when prepared properly. Cauliflower rice is very similar, in my opinion, they aren’t cooked quite as long or whipped up. In my opinion cauliflower rice is easier to prepare. That is why I included a cauliflower rice recipe on this post.
I make my cauliflower potatoes and cauliflower rice differently than any of these recipes. I think it is much easier to prepare. You do have to have an Instant Pot though. I’m going to tell you how I make my cauliflower rice right now with some tips I have learned. I buy either a whole head of cauliflower, a bag of cauliflower from Costco that is already cut into florets or I buy a bag of frozen cauliflower.
I’m sure you can figure out which is easier. The tips are that the fresh head of cauliflower is quite pricey in any grocery store and so is the bag from Costco. I have noticed the price of cauliflower rise quite quickly recently.
I don’t know if it’s the time of year or not. But a bag of frozen cauliflower is a lot cheaper ounce per ounce. I can’t tell the difference in the taste when my meal is prepared, plus it’s already cut up and washed and ready to go.
I put the cauliflower in my Instant Pot inside of a wire container with holes in it. I add one cup of water to the pot. I close the pot and set it to steam for 10 minutes which is the auto setting for steam. So that’s really easy too. Frozen cauliflower takes the same amount of time to cook as fresh.
When it is finished cooking I dump it into a large bowl and use either a potato masher or a pastry blender/cutter to chop it into little pieces. I love it plain with real butter or coconut oil and Real Salt and pepper. You could cook your cauliflower like I do in the Instant Pot and use it to complete any of these recipes below.
I think cauliflower cooked this way tastes better than just a side dish of cooked cauliflower as a vegetable too. Steaming is always a better option in my opinion than boiling a vegetable in water.
All of the vitamins and minerals seep out into the water and get thrown away. Roasting is also a healthy way to prepare vegetables too but they won’t be cooked enough to mash them unless you also cook them in some water.
Any of these recipes could be used as a side dish as a vegetable or to replace potatoes or rice.
