These Paleo coconut cookies only have 5 ingredients for the base and then are filled with a simple salted caramel sauce.

Instructions

  1. Preheat the oven to 350 degrees
  2. Mix all of the ingredients for the cookies (except the shredded coconut) in a large bowl until a dough forms
  3. Take a Tbsp sized piece of dough and roll it into a ball
  4. Roll the ball into the shredded coconut until well coated
  5. Place on a baking sheet
  6. Gently press your thumb or the back of a spoon into the middle of each cookie
  7. Bake for 10-12 minutes
  8. Reinforce the thumbprint in the middle of the cookie when they come out of the oven, if needed
  9. Combine all of the ingredients for the caramel in a saucepan over medium heat
  10. Allow to come to a boil and then reduce heat
  11. Allow to simmer 10-15 or until it thickens and forms a caramel sauce
  12. Pour a small amount of the caramel into the middle of each cookie
  13. Allow the caramel to cool
  14. Lightly sprinkle with course sea salt

Notes

There will be leftover caramel sauce You can use the caramel sauce recipe as linked above if desired (it uses a different natural sweetener)
