It's always a big hit at family parties and is easy to make for large gatherings or perfect to make at home for Sunday dinner and have leftovers for a few nights.However, the traditional way of eating pulled pork in my family is on hamburger buns or white rolls and that's just not going to work for Paleo. Sure, I could make some Paleo hamburger buns but those are a little too Paleo for my Dad and too much work for a big group of people.So for a while, I would just serve my family white hamburger buns and I would eat this delicious pulled pork by itself in a pile on the plate, but I don't do well when I don't have any carbs at all in a meal. Plus, I wanted something actually healthy to go with my pulled pork. And something that's not too foreign for my Dad or he would give me a bad time.So that's when I had the idea to put the Paleo pulled pork inside baked sweet potatoes. I love the sweet BBQ sauce with the sweetness of the sweet potatoes and I think the texture of the two go really well together!With pulled pork being such juicy meat with an incredible flavor on its own, by adding this sauce to it, it adds a rich and oaky taste with a hint of smoke to your palate. Just the smell made me drool while I was shredding the pork.While I prefer pulled pork on sweet potatoes, you are perfectly welcome to put it on your favorite buns instead. This is a good recipe to start with as a base for pulled pork and then do what you like with it.If you haven't tried the pulled pork and sweet potatoes together, you definitely should.
