Happy Monday to all of you. This particular Monday calls for a little bit of extra chocolate. My children will all be in full-time school this year, and I am having very mixed emotions about it. It will be so nice to have them gone all day, but I will also miss them so much. It’s going to be so quiet around here. Eerily quiet.
Sure, I can work on my blog a lot. But, I’ll have to work. I won’t be able to do fun things with them instead and I won’t get to see them nearly as much. Plus, there’s the whole routine thing and getting them to get themselves ready for school in the morning. The worst part of the day.
Plus, it means they are all growing up way too fast. Two of them start Jr. High this year. Where the heck did the time go? Seriously. It all goes way too fast. I’m not ready for teenagers.
I’m worried I’m doing a terrible job as a mother and they are going to move out of the house soon and not be ready and I will have lost my chance. It’s so scary. OK. Just take a deep breath, Rebecca. Just take one moment at a time.
Anyway, all of these emotions = more chocolate for me. Luckily, I have these pecan bars without corn syrup that I can make. They are similar to Rice Krispie treats, but instead of puffed white rice, I am using nutrient-rich pecans, and instead of marshmallows as a sweetener, I am using brown rice syrup.
Which happens to be much easier on your blood sugar than sugar (it has a GI index of 25 compared to white sugar at 64), and it includes some nutrients such as magnesium and B vitamins.
Basically, what all of this means, is that these treats are a fabulous healthy indulgence that you don’t have to feel guilty about eating. It is especially good for days that call for a little bit of extra chocolate, like today! Time to relax, enjoy the silence, eat my chocolate without my kids begging for it and not worry about how I’m ruining their lives.

These dark chocolate pecan bars are a no-bake healthy indulgence that are super-simple to make with only 4 ingredients and they only take about 10 minutes to make from start to finish.
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 16 1x

- Cuisine: Clean Eating
- Grease a 8×8 pan with coconut oil.
- Melt together chocolate chips, brown rice syrup, and coconut oil on stovetop on low heat.
- Once melted, stir in chopped pecans.
- Add entire mixture to a greased 8×8 pan.
- Allow to cool completely.
- Cut in to about 16 pieces.
