I have this problem when I eat at family gatherings. My dad totally does not understand why I eat Paleo and won’t eat anything that he thinks is Paleo at all. Well, the joke’s on him. This salmon is really good served over a bed of arugula with a little salt and lemon juice instead of dressing. Healthy all around.

I love salmon and I love grilled burgers and I also love guacamole so this is a no-brainer in my opinion. I love that I can just open a can of salmon to make these if I want to. I love how this whole meal can be made on the grill. I don’t really like it when you have to bake your meat before you grill it. I like to use my grill to make my life easier. I don’t think having to cook it twice makes my life easier. I also love that it has a lot of healthy veggies which help make it a well-balanced meal. The vinaigrette dressing makes it really tasty and blends all the flavors together.

I think it’s really interesting how this chicken is cooked with the lemon. Yes, the lemon is cooked on the grill. The chicken has to soak up all the flavor of the lemon when it’s cooked together.
