I love summer and I really enjoy those outdoor barbecue’s. I don’t know anyone that doesn’t love a great outdoor BBQ whether it be in your backyard, at the park, up the canyon in the mountains or on the beach. I decided it would be fun to make some Paleo BBQ posts so the first one I did was for BBQ Grilled Recipes and now I’m making this one for Paleo Side Dishes for BBQ.
I love summer, that unless it’s so hot I don’t want to go outside like this summer. It’s been in the 90’s or higher every single day for about 4 months straight. That isn’t an exaggeration. It’s an unusually hot summer. It does cool down in the evenings here and with the long evenings when it doesn’t get dark until 9 pm. With all that heat I don’t like to use the oven and using the grill works perfectly. Salads, vegetables, and salsas are the perfect summer Paleo side dishes to keep cool. I love how I can either get easily or grow delicious fresh fruits and vegetables. They taste so much better when they are fresh and ripe off the vine or tree. They retain so many more vitamins and minerals when they are fresh too. It’s a win-win situation.

This salad is light and healthy, great for summer.

Then when you scoop the salsa on a salty chip it all comes together. The perfect blend of flavors.
