Because of various dietary restrictions, my husband usually cooks his own meals and often for the children too. We try to limit it to two meals, and since my husband and I rarely eat the same thing, whichever one of us is making something the children will like better, makes enough for the kids, or sometimes we split and I’ll make dinner for two children and he does the other children.
Well, that is a long way of saying that my husband knows how to cook well and he cooks often. Especially when it comes to his Traeger. He is in love with that thing. So on Thanksgiving we ate at my mom’s house, so we only had to bring a turkey (which he smoked), brussell sprouts (which he made), and stuffing (which he made from a box cause we live in the real world over here).
Then the rest of the weekend we made gingerbread houses, baked some cookies, did crafts, went bowling, went to a movie and I got a lot of work done, in addition to all the fun. It felt like three Saturdays in a row. Busy, but good.
These Paleo cranberry bars are the perfect treat for the holidays; cranberries are a fabulous price right now, they are so pretty to look at, they taste amazing, they are a healthy treat full of antioxidants and various other nutrients, they are vegan and Paleo friendly, and they are super-simple to make.
Really, there is no good reason not to make these for your next holiday party, or just to make for a fun holiday treat, especially when you are surrounded by sugary sweets everywhere you look, and you want to enjoy a treat without completely derailing your health related goals.

For the Crust
For the Filling
- Preheat oven to 375 degrees
- Mix all of the ingredients for the crust in a large bowl until a dough forms
- Cut out 1/4 of the crust dough and set aside
- Press the remaining 3/4 of the dough into a well greased 8×8 baking dish
- Mix all of the ingredients for the filling together in a large bowl
- Pour the filling into the prepared 8×8 baking dish
- Crumble the 1/4 of dough (that had been set aside) over the top of the filling
- Bake for 35-45 minutes until the top starts to lightly brown
- Allow to cool and serve
- Store any leftovers in an airtight container in the fridge
