Roasted Sweet Potato Salsa Recipe with Homemade Tortilla Chips

Salsa
2 sweet potatoes
1 onion
1 tablespoon coconut oil, melted
1 pint cherry tomatoes, diced small
1 large avocado, diced small
¼ cup chopped fresh cilantro
¼ cup fresh lime juice
Salt to taste
Tortilla Chips
8 corn tortillas
1 tsp coconut oil, melted
Real salt * , to taste
Salsa Instructions
Preheat oven to 425 degrees F.
Peel and dice sweet potatoes.
Cut up sweet potatoes

Toss together sweet potato, onion, and oil and place on cooking sheet.

Roast in oven until sweet potato is fork tender (approx. 30 minutes).
While cooking prepare and bake tortilla chips.
Transfer salsa mix to a large bowl and let cool completely.
