Description

These mashed sweet potatoes are quick to make and the Greek yogurt in them makes them extra creamy and healthy.


Ingredients

Scale
  • 2 large sweet potatoes (peeled and chopped)
  • 1/2 cup plain Greek yogurt
  • 1-2 Tbsp pure maple syrup * (optional)
  • Cinnamon

Instructions

  1. Boil the sweet potatoes in a large pot of water until they can easily be pierced with a fork
  2. Drain the water from the potatoes
  3. Mash the potatoes with a potato masher or a large fork
  4. Stir in the Greek yogurt and maple syrup
  5. Sprinkle with cinnamon and serve

Notes

  • More or less yogurt maybe used, depending on taste and desired consistency.
  • Sour cream or regular plain yogurt maybe substituted for the Greek yogurt.
  • The sweet potatoes maybe steamed if you are short on time, but boiling them will create a smoother consistency.
  • The maple syrup is optional. I don't add extra sweetener, but many prefer the extra sweetness. Stevia or other natural sweetener maybe substituted.
  • Some like to add a pinch of salt as well - feel free to add it, if you feel you need it.
