Description
These mashed sweet potatoes are quick to make and the Greek yogurt in them makes them extra creamy and healthy.
Ingredients

- 2 large sweet potatoes (peeled and chopped)
- 1/2 cup plain Greek yogurt
- 1-2 Tbsp pure maple syrup * (optional)
- Cinnamon
Instructions
- Boil the sweet potatoes in a large pot of water until they can easily be pierced with a fork
- Drain the water from the potatoes
- Mash the potatoes with a potato masher or a large fork
- Stir in the Greek yogurt and maple syrup
- Sprinkle with cinnamon and serve
Notes
- More or less yogurt maybe used, depending on taste and desired consistency.
- Sour cream or regular plain yogurt maybe substituted for the Greek yogurt.
- The sweet potatoes maybe steamed if you are short on time, but boiling them will create a smoother consistency.
- The maple syrup is optional. I don't add extra sweetener, but many prefer the extra sweetness. Stevia or other natural sweetener maybe substituted.
- Some like to add a pinch of salt as well - feel free to add it, if you feel you need it.
