Paleo Apple Pie Bars Recipe

These Paleo apple pie bars have a simple almond flour pie crust that you don’t have to roll out – just press in the pan, put in the simple filling and crumble with a little more crust. If you want, there is an optional maple coconut cream icing that just puts them over the top.

  1. 1/4 cup coconut cream *
  2. 1 Tbsp pure maple syrup *
  3. 1 Tbsp unsweetened almond milk

Instructions

Dough

  1. Preheat oven to 350 degrees F.
  2. Shift together the almond flour and arrowroot powder.
  3. Add 1/4 cup pure maple syrup and melted coconut oil to the flour mixture until a dough forms.
  4. Reserve approximately 1/4 cup of the dough and press the remaining amount into the bottom of a well greased 8×8 baking dish.

Filling

  1. Add the apples, 2 Tbsp maple syrup, coconut sugar, vanilla, and spices to a small bowl and stir until apples are well coated.
  2. Spread evenly on top of the pressed dough.
  3. Crumble the remaining 1/4 cup dough on top of the apples.
  4. Bake 35-45 minutes or until apples are softened.
  5. Allow to cool.

Icing

  1. Mix together all ingredients and drizzle over baked bars.
