A Healthy, Oven Tortilla Soup Recipe - #soup #recipe

The following is an oven-roasted easy chicken tortilla soup recipe.  I think it’s especially good since the vegetables get that nice oven roasted flavor.

Tortilla Soup
Oven Ingredients:
  • oil
  • onion
  • chicken thighs if going to be cooking for a long time, chicken breasts or tenders if not going to simmer for long.
  • bell pepper
  • zucchini (optional)
  • cumin
  • chili powder
  • Real Salt (see below to purchase)
  • pepper
Pot Ingredients:
  • can crushed tomatoes
  • green chilies and/or jalapenos
  • chicken broth and/or water
  • black beans
  • cumin
  • chili powder
  • Real Salt
  • pepper
Optional toppings:
  • tortilla chips, sour cream, lime, raw red onion, avocado, salsa, cilantro.
  1. Add oven ingredients to baking dish
  2. Bake at 400 until the veggies are nice and browned and have that yummy roasted flavor.
  3. Meanwhile, in large pot add pot ingredients
  4. When the oven ingredients are done, cut up the chicken with tongs and scissors and put in with the above broth.
  5. Simmer for as long as you can, like at least 1-2 hours.
  6. Top with optional toppings
