Teriyaki Paleo Grilled Chicken Skewers Recipe {Gluten Free, Clean Eating, Dairy Free}

This grilled Paleo grilled pineapple chicken kabobs recipe is just what you've been looking for to make for your next outdoor BBQ. We have the perfect summertime recipe for you today, grilled Paleo teriyaki chicken! Great news, it is SUMMER!

If you haven't already, you are going to want to push off the dust from your BBQ grill for this one! This is a great recipe to impress family and friends with. It is super easy to make and is prepped ahead of time, which will save you time and stress at dinner time.

This teriyaki sauce is sweetened largely with dates so that only a minimal amount of honey is required. The dates and sweet onion also work together to thicken the sauce once it’s pureed, so that no thickening agent is needed. Because of the thickness of the sauce, it clings very well to the chicken allowing it to be even more flavorful.

Teriyaki Paleo Grilled Chicken Skewers Recipe {Gluten Free, Clean Eating, Dairy Free}

The grilled Paleo teriyaki chicken develops a nice depth of flavor from soaking in the teriyaki sauce and then a freshness from having the sauce brushed on while grilling. You could even save some of the teriyaki sauce to use for dipping. If you don't have coconut aminos, the closest Paleo item would be a Paleo balsamic vinegar.

I get mine from Costco and I use it A LOT. I basically replace it in any recipe that calls for soy sauce because it actually has a fairly similar flavor profile, but soy sauce is evil! Seriously, soy sauce is one of the most unhealthy things I can think of to eat.

Description

This teriyaki sauce is sweetened largely with dates so that only a minimal amount of honey is required. The dates and sweet onion also work to thicken the sauce once it’s pureed so that no thickening agent is needed.


Ingredients

Scale
  • ½ Yellow Onion (chopped)
  • 1 Tbl Coconut Oil
  • 10 Dates (chopped)
  • 2 tsp Garlic (minced)
  • 2 Tbl Fresh Squeezed Orange Juice
  • ¾ Cup Coconut Aminos *
  • ¼ Cup Raw Honey
  • 2 Tbl Rice Vinegar *
  • ½ tsp Real Salt *
  • Red Chili Flakes (optional)
  • 2 Boneless Chicken Breasts (cut into 1” cubes)
  • ½ Fresh Pineapple (cored and cut into 1” cubes)
  • Fresh Cilantro (roughly chopped, to garnish)
  • 8-10 in Wooden Skewers (soaked water for 20 minutes)

Instructions

  1. Heat the coconut oil in a small sauce pan. Add the onion and sauté on medium heat for 2-3 minutes, or until it becomes translucent and soft. Add the garlic and sauté for another 30 seconds. Add the dates, orange juice concentrate, coconut aminos, honey, vinegar, salt, and chili flakes(if using) to the sauce pan and bring to a boil. Reduce the heat and simmer for 5 minutes. Mixture should have started to thicken a bit and dates should be soft.
  2. Pour the mixture into a blender and puree until very smooth and thick.
  3. Place the cubed chicken in a container or Ziploc bag and pour ¾ of the teriyaki sauce over it. Seal and let marinate in the refrigerator overnight, or for at least 30 minutes. Marinate overnight for best flavor. Reserve the rest of the teriyaki sauce in an airtight container and refrigerate.
  4. When ready to make the skewers, thread the marinated chicken and pineapple cubes onto the soaked wooden skewers, alternating each item. You should end up with 8-10 skewers, depending on how heavily you thread them.
  5. Preheat a grill, making sure to oil the grates before doing so.
  6. Grill the skewers on all sides until cooked through, basting with the reserved teriyaki sauce while they cook.
  7. Serve garnished with cilantro.

    This recipe looks great! Can I leave the dates out? Or is there something else I can use in place of them to thicken the sauce... like arrowroot powder/tapioca starch?

      You can leave the dates out, but you will need to replace them with some sort of sweetener, like honey or maple syrup. Arrowroot or tapioca flour would be fine to thicken it with =)

      Thank you! You can definitely cook it in the oven. I would recommend preparing it as instructed but broiling it so that you get that caramelization on the chicken.
