I say to use a 2-3 pound chuck roast, but you can use a butt roast also. A 2-3 lb roast will probably get you 8-12 servings and I always have too much so I always cut my roast in half and freeze the other half. This works best for us, but I included ingredients to use for a full roast.
The gravy is really easy to make and you can easily make it gluten free by using a gluten free flour or “clean” by using whole wheat, spelt or einkorn flour. To make this easy pot roast crock pot recipe Paleo, just use turnips instead of white potatoes and tapioca or arrowroot starch for the gravy. It is the middle of December and here in Utah where we live it is normally very cold and snowy. There is usually so much snow all the time for months on and on. Well it has only snowed twice this year and the amount of snow was very small compared to a normal Utah snow. I mean it hasn’t snowed enough to send the kiddos out to build a snowman (which they have been wanting to build Olaf) or throw snowballs and just play in the snow!
As Christmas gets closer we are all hoping it will start to snow! I don’t know about you guys and depending where you live, it doesn’t really feel like the holiday season until there is snow every where!
Not only has there not been any snow but it has been abnormally warm! I have been walking around in sandals and no jacket! This unheard of in December here in Utah! Where you do you live? We hope you enjoy this Pot Roast dinner that is great to make in the morning and it will be ready for dinner time! Just throw it in the crock pot!

- 3 lbs Chuck Roast
- 5 Potatoes cut into chunks (parsnips for Paleo)
- 1 Onion cut into chunks
- 4 Carrots cut into chunks
- 2 cups Beef Stock or broth
- 2 cups Water
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Italian Seasoning
- 1/4 tsp Real Salt
- 1/4 tsp Pepper

First cut all of the potatoes and onions into large chunks. Using large chunks (about 2 inches square) makes sure they don’t turn to mush in the crock pot.

First add the Roast to the crock pot, then the potatoes and onions and carrots (if used).

Then add the seasonings over top.

Next add the beef stock. The roast should be covered in liquid so add water until it is covered.

Depending on your crock pot and how fast it cooks will depend on the time. Mine is pretty hot so it took about 5 hours on high.

You will know it is done when you put a fork in it and it just falls apart.

Once it is done remove the roast, potatoes, onions, and carrots from the crock pot and enjoy.

You can use the juice over your roast or you can make a gravy by putting it on the stove and bringing to a boil while whisking in flour to the desired texture.













I usually sear my roast on all sides before putting it into the crock pot. This recipe has no mention of this step. I’m going to give it a shot and follow your directions. I’d love to be able to omit that step if it’s not necessary. I’m hoping that it turns out as delicious as it sounds. Wish me luck!
It’s one of those things that’s not necessary, but it does give it good flavor and seal in the juices if you do. I just like to keep things simple and it’s an extra step I don’t usually have time for. Plus, lots of times I put a completely frozen roast in my crock pot and searing wouldn’t work anyway. How did it turn out for you?
I have kind of a blonde question as I am a new cook lol. So after I add all the ingredients in th me crockpot I literally just fill it with water until the roast and everything is under the water? Or just wet? Thank you!
Just enough broth to cover the roast (the recipe says use 2 cups of beef broth, but if the roast isn’t covered by that, add more water until just the roast is covered with liquid). The vegetables will steam while the roast cooks, so they don’t need to be covered in liquid. Good luck!
Made tonight and is delicious. Up until the start of 2016 it was very mild here in CT too… But we’re expecting our first “real snow” this upcoming weekend.
Do you cover EVERYTHING with the water/broth or just the actual roast?

What’s the 2 cups water for? Just pour it over everything with the beef broth?
Where do you get gluten free beef broth/stock? My son has celiac don’t have to be super mindful of the gluten ingredients
I usually just make my own bone broth, but every once in a while when I buy broth, I just buy it at Costco and it’s gluten free and doesn’t have any added ingredients, so I don’t think it’s too hard to find gluten free broth, but I could be wrong?

This recipe looks great! I’ll be making it this weekend. When you buy a 2 to 3 pound roast and cut it in half, does that mean you leave the rest of the recipe the same but with a 1.5 pound roast?
It is totally up to how much meat you like having. If you like more of the other stuff and less meat that works great. If you like a lot of meat you can just downsize the rest slightly.
