Full disclosure – I would probably turn down a piece of cake stacked with frosting, not because I wouldn’t want to eat it, but because I would be trying to make healthy choices to get my day started – I know, LAME…but I wouldn’t turn down this cake for breakfast.
This Clean Eating Breakfast Cake is a light and fluffy cake, that is lightly sweetened, and perfectly seasoned. It is also made with whole-grain spelt flour , no refined sugar, and is Vegan…so I can eat it and feel good about making a healthy breakfast choice. In other words – “I can have my cake and eat it too” – sorry, I couldn’t help myself, I had to throw that in :).
This Clean Eating Breakfast Cake is also great for brunch, Mother’s Day, or Christmas morning. The entire family will love it, and you can feel good about starting their day off with something that has a little bit of nutritional value, because, let’s be honest, they aren’t going to get any the rest of the day, especially on a holiday :). Don’t wait for a holiday or special occasion to make this – it tastes just as good on a regular weekday, and is super easy to throw together.
I am BUSY this holiday season! Aren’t we all, especially this time of year? I find myself getting so caught up in my do-to list, that I forget why I am doing it all. Why is that so easy to do? Anyways, I took a moment last night, when everyone was in bed, and I was up late trying to get things done (like usual), to sit in front of the Christmas tree and reflect, and slow down for just five minutes and remember why I am doing all of this.
I really hope my children will look back someday and appreciate the time and love I take in preparing homemade, healthy meals for them and that someday they will prepare some of the same food for their children. And maybe pass down some of our holiday traditions, like Christmas brunch.

Cinnamon Spice Clean Eating Breakfast Cake Recipe
This Clean Eating breakfast cake makes a perfect brunch and has a simple cinnamon-spiced cake topped with cinnamon sugar oats.

For the Cake
- 2 cups whole grain spelt flour (or whole wheat flour)
- 1 Tbsp ground flaxseed
- 1 tsp Real Salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/8 tsp cloves
- 1 tsp cinnamon
- 1/2 cup coconut sugar
- 1/3 cup coconut oil (melted)
- 3/4 cup unsweetened almond milk (or milk or your choice)
For the Topping
- 1 Tbsp coconut oil (melted)
- 1/4 cup old-fashioned oats (could roughly chop or blend if you want a fine crumb topping)
- 2 Tbsp coconut sugar
- 1 tsp cinnamon
- Preheat oven to 400 degrees F and grease a 8×8 baking dish.
- Sift together all of the dry ingredients in a large bowl.
- Add in the wet ingredients and mix well (it will be a lot drier than a traditional cake batter).
- Pour the batter into the greased 8×8 baking dish.
- Use the same bowl and mix together the ingredients for the topping until a rough crumb mixture is formed.
- Sprinkle the topping over the batter.
- Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
