Keto Salsa Chicken Recipe

This Keto salsa chicken is a great four-ingredient easy, meal prep recipe. This is the easiest recipe in the world and it can be used to prep other meals also.

Okay, so I have to confess.....one of the main reasons I did not and "could not" eat healthy before was mainly because of my lack of knowledge when it came to COOKING!!!!

Yes, kind of important!!! Do you want to know what you are putting in your body? Then you better be making it at home!
Another reason I had such a hard time was because I was always in a hurry! I woke up every single morning with GOOD INTENTIONS and did perfect till about 5 when dinner rolled around and I didn't know what to make!!

Or I knew what I was planning on making, but by the time it came down to doing it I was either too tired or didn't thaw out the ingredients. Sometimes everyone was starving so we resorted to a "desperate meal" and then vowed to do better tomorrow!

So to avoid resorting to those "Desperate Meals" (as I call them) I found that I needed to always PLAN and PREP my meals!!
Some of the steps in prepping your meals for the week is to:

  • Make a menu, shop for the menu and STICK to the menu
  • Pre-make your chicken, rice & potatoes
  • Cut up produce, and even portion them out if needs be!
  • Measure out meals and snacks into baggies and Tupperware so you have all your meals ready to go! Even if you are a stay at home mama, you should prep meals because we all know that even at home it can be hard to get your good meals in!
    (I even go into detail by counting out my crackers and putting them in individual ziplock baggies so that if I am in a hurry I can grab a string cheese and baggy of crackers for an on-the-go snack.)

PREP is IMPORTANT!!! -Very important!!! 

So.....that brings me to today's post!

I like to cook my chicken 2 times per week so that we always have some but that its always only within a few days old. There are so many different ways to cook your chicken as well! Depending on the menu for the week you could do Lemon Chicken, Garlic Chicken, Seasoned Chicken or Salsa Chicken or Barbecue Chicken. You can cook in the crockpot, bake in a pan, grill on the barbecue.... So many options!

The Chicken I made this week was salsa chicken! EASY! Which is the reason it is one of my favorites!
Plus I like a lot of salads, sandwiches, and tacos so the salsa flavor is just delicious!

Remember, you can cook it so many different ways...this is just how I did it this time - and if you want an easy way to make chicken-it doesn't get much easier than this! Always be careful and clean when handling and preparing chicken! 

How to Make

Time needed: 1 hour and 7 minutes.

This is one of my favorite meal prep chicken dishes.

  1. THAW your Chicken

    If you want to thaw in the fridge over 8-10 hours make sure you put in a covered container! Or you can thaw in the microwave on Defrost as a quick method.

    There are usually instructions on the back of the bag for thawing-so follow those. Its an option to cook from frozen as well-I personally prefer to thaw it.

  2. Place in pan

    Arrange chicken in a single layer in a glass pan. (I always spray with Pam, but you don't have to)

  3. Add salsa

    Pour 2 cups of Salsa over top of Chicken Breasts. You don't really need to measure the salsa, sometimes I pour a whole jar on! The general rule is just to make sure each chicken breast has salsa on it so it can absorb the flavor!

  4. Cover

    Cover with FOIL or an oven-safe lid to keep moisture in.

  5. Cook

    Place in a preheated oven (at 375) and I usually cook for 60-70 minutes. Cook time can vary on how thawed your chicken is or isn't.

  6. Check for doneness

    When your chicken is done it should not have any pink when you cut down the middle! So ALWAYS check that it is thoroughly cooked!

    Then as soon as it is cooked and out of the oven I shred with 2 forks (which it should also shred easily if it is cooked well!) All those juices from the salsa not only give a good flavor but keep it moist as well.

  7. Meal prep

    I let it cool for a short time and then I place in a sealed container and refrigerate! You can freeze it as well if you would like it to last longer than a few days.

    And don't forget, the point of all this is to be PREPARED! Have your menu planned out, food prepped and stick to it so that you are never in a desperate situation and regretting it later.

Can you freeze this?

Yes! I love to make huge batches of this chicken ahead of time and freeze it in individual containers then pull it out and microwave it for about four minutes and it is ready to go. Sometimes I freeze it in bento boxes with other food for a complete meal and other times I do just the chicken because I want to use it as an ingredient in other recipes.

Description

This recipe is so incredibly easy to make ahead and then just have flavorful, moist chicken whenever I want. I usually make a ton for dinner the first night and then save the leftovers for things like tacos, burritos, taco salad and lunch for the next few days. Yum!


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cups salsa
  • ½ cup cheddar cheese (Optional. Don't use for Paleo or Whole30)
  • parsley or cilantro to sprinkle on top

Instructions

  1. Place chicken breasts in oven safe dish
  2. Pour salsa on (can use more or less to taste)
  3. Sprinkle cheese and/or herbs
  4. Cover with tin foil or oven safe lid
  5. Bake at 375 for 60-70 minutes
  6. Shred
  7. Enjoy immediately or save for dinner to eat plain or on things like tacos, taco salad, enchiladas, tostadas, burritos, etc.

    This sounds like a very quick, easy, and yummy recipe. When you're a mom, you have to think a head of time ALL THE TIME! I agree with you that prepping is very important!
