Healthy Recipes For One Person
1. Easy 30-Minute Frito Taco Salad Recipe – My Natural Family
Ground Beef – Onion – Diced Tomatoes – Crushed Tomatoes – Red or Kidney Beans – Fritos – Cheddar Cheese – Sour Cream – Salsa
I suggest you half the recipe. It’s easy to do, just use half of everything in the recipe.
It’s pretty easy to make this. All you do is open cans and while it’s heating up you prepare the toppings like the chopped tomatoes, green onions, and salsa. When the chili is warm you pour it over a bed of Fritos. So easy I think my dad could make it, oh except he wouldn’t because he doesn’t like beans.
2. Tomato and Cheese on Toast – Italian Chips
Whole Wheat Bread – Cheese – Tomato – Oregano – Olive Oil
This is about the easiest thing you could ever make. Slap some cheese and a slice of tomato on some bread and pop it in the oven to roast. Easy peasy and oh so delicious.
3. Ratatouille for One – One Dish Kitchen
Olive Oil – Onion – Zucchini – Bell Pepper – Real Salt – Roma Tomato – Garlic – Basil – Oregano – Thyme – Black Pepper – Parmesan Cheese
Ratatouille is good on its own but it’s also good a lot of other ways. You could serve it over quinoa, rice or polenta. You could use it as a topping over beef, chicken or fish. It’s also good served with poached eggs or whole wheat pasta. You could even put it inside an omelet. Be creative and come up with your own ideas.
4. Single Serving Shakashuka – Real House Moms
Marinara Sauce – Pesto – Eggs – Parmesan Cheese – Real Salt
I just learned that this is actually meant to be eaten for breakfast. Well, who says you can’t eat eggs any time of the day you want? Personally I think I would gag on the marinara sauce that early in the day. It’s pretty easy to make. All you do is throw this stuff in a pan and bake it in the oven for 13-15 minutes. It can be baking while you’re doing something else. Enjoy!
5. Stuffed Sweet Potatoes – Betsy Life
Sweet Potato – Black Bean Burger – Scallions – Chipotle Chili Powder – Cumin – Pepper Jack Cheese – Avocado
Pretty simple you just have to plan ahead a bit. Stick the sweet potato in the oven to bake while you’re doing whatever. It takes almost an hour so you could have a nap, get the house clean, dishes done, etc. When it’s done you just put the other ingredients on top and eat it up. I think I would be tempted to just open a can of black beans or chili instead of using a bean burger. A bean burger might have more flavor though.
6. Chicken Stuffed with Mozzarella, Tomato and Basil – Walking on Sunshine
Chicken Breast – Mozzarella Cheese – Grape Tomatoes – Fresh Basil – Italian Seasoning – Olive Oil
Pretty easy to make again. I think anyone could make some cuts in a chicken breast. Stuff some cheese and tomato in it and throw it in the oven for bake for 30 minutes while they take a nap. Ha Ha! I never get to do that, does anyone else? I’d be working or cleaning the house, doing the laundry or loading the dishwasher. What would you be doing?
7. Parmesan Chicken Wrap – Dashing Dish
Chicken Breast – Spaghetti Sauce – Parmesan Cheese – Mozzarella Cheese – Italian Seasoning – Wrap or Tortilla
This is the homemade version of a pizza pocket. Just place some cooked chicken, cheeses and seasoning on a tortilla. Wrap it up and microwave it for a couple of minutes. Place it over some spinach leaves and enjoy eating it. It’s kind of like chicken parmesan wrapped up! You don’t have to make two, of course, you know. I can just make one for yourself.
8. Minestrone Soup For One – One Dish Kitchen
Bacon – Onion – Garlic – Worcestershire Sauce – Kidney Beans – Tomatoes – Vegetables – Chicken Broth – Whole Wheat Pasta
Just a note: To make this truly clean eating you need to use whole wheat pasta.
This recipe is already adjusted so that the individual amounts for each ingredient are just the right amount for one person. You know how easy soup is to make. Just dump and pour and stir.
This soup can also be a good “clean out your cupboards and frig” meal. Meaning, you can pretty much add or subtract anything you want within reason. Just remember, you’re going to have to eat it.
9. Macaroni and Cheese Recipe – The Gracious Pantry
Whole Wheat Pasta – Milk – Cheddar Cheese – Dried Mustard – Whole Wheat Pastry Flour
I would use half of everything for this recipe unless you want it for leftovers the next day. BTW I love mac and cheese cold. If you haven’t tried you should just to see if you like it too.
