There has been many years of research about blueberries and the antioxidants they contain. It has been thought that blueberries contain potential benefits for brain and nervous system health. There is new evidence, which is quite exciting, that blueberries can improve memory.
So eat as many blueberries as you want and these Paleo blueberry muffins recipes are a really good way to do it. There are some great flavors that are mixed in these muffins.

So I never knew how much I loved blueberries until I got married and bought them myself. They are like my favorite fruit now. I like to buy the big bags of frozen blueberries at Costco because the berries are so much bigger and riper and just taste better.
I’ve bought the small bags from the regular grocery stores and they just don’t even come close to tasting as good. They are small and green, yes, the small ones just haven’t finished growing and are sour in my opinion. My youngest daughter loves to just get a bowl of frozen blueberries and eat them plain out of the bag. She absolutely adores them. Frozen Costco blueberries would be great in any of these recipes.

Paleo Blueberry Muffins Recipes

These have added applesauce and blueberries to add moistness and they’re loaded with flavor. They are fluffy too and have a great texture. A batch of these will make the kids, family and friends happy for the rest of the day. They will come back for more another day so you better have all the ingredients on hand, just in case.
2. Deliciously Ugly Lemon-Berry Muffins – Better With Cake
Eggs – Bananas – Coconut Flour – Lemon Zest – Blueberries – Raspberries
Emma doesn’t think these are much to look at. But, she says they taste so much better than they look. Take a bite of these with their berries and lemon and you’ll be glad you did. They are light and elegant, deliciously tender, subtly sweet and will melt in your mouth. Two kinds of berries make them burst with sweet juicy flavor.
3. Blueberry Lemon Poppy Seed Muffins – Flavour and Savour
Almond Flour – Baking Powder – Lemon – Real Salt – Poppy Seeds – Eggs – Honey – Butter – Blueberries
It’s blueberry season at Elaine’s house so she decided to pick some fresh blueberries off the bushes in her yard. Man, I bet those taste a lot better than the blueberries I buy in the store. She used her basic Paleo muffin recipe and added some lemon juice, zest and poppy seeds. They turned out light and lemony and will totally satisfy your hunger.
4. Lemon Blueberry Muffins – Kim’s Cravings
Paleo Flour – Real Salt – Baking Powder – Poppy Seeds – Blueberries – Eggs – Almond Milk – Vanilla – Lemon – Maple Syrup – Coconut Butter – Coconut Oil – Lemon Juice
These are made with Paleo flour. Yes, that’s what it’s called. It’s kind of a new thing and I think it’s wonderful. It makes Paleo baking a lot easier. You don’t have to buy a bunch of different kinds of flour and measure and mix them together. It’s already done for you in a great combination. Paleo flour is made with the perfect combination of almond flour, arrowroot starch, coconut flour and tapioca flour. Give it a try, it could become your new favorite flour. You might use it for all of your baking recipes. An Optional glaze recipe is included and it’s Paleo, it look delicious to me.
5. Blueberry Muffins – Veggie Balance
Almond Flour – Eggs – Blueberries – Honey – Apple Cider Vinegar – Real Salt – Vanilla – Olive Oil – Blueberries
These are made with almond flour which is packed with protein. There are only seven ingredients which makes mixing faster and easier. Apparently, seven ingredients don’t include salt and vinegar. I don’t know why the blogger says there are only seven. They are perfectly sweetened and moist. You’ll think you went to muffin heaven.
6. Breakfast Muffins – Paleo with Mrs. P
Blueberries – Ground Almonds – Eggs – Mixed Seeds – Palm Sugar – Almonds – Coconut Oil – Almond Milk – Baking Powder
These should be able to be made with baking staples you have in your cupboard. That is if you’ve already been on a Paleo diet for awhile at least. They are also made with fresh blueberries and mixed seeds which adds some extra crunchiness and flavor. They make a great on the go breakfast or a nice mid-morning snack or you can put them in your kids’ lunch box. They shouldn’t take more than thirty minutes to prepare and bake. They are fluffy, light and delicious.
7. Blueberry Muffins – Cook Eat Paleo
Almond Flour – Eggs – Blueberries – Baking Soda – Real Salt – Honey – Ghee – Lemon Juice – Vanilla Extract
I love muffins for breakfast and blueberry muffins are one of my favorites to have. I love how the kitchen is filled with the smell when I’m baking. The smell of the almonds, blueberries, honey, and lemon together is just amazing. I like the flavor of blueberries and almonds together, that’s why I used almond flour. I think it’s very important to use almond flour, not almond meal. The texture is so much nicer. Almond meal is so much more grainy and course.

I think Paleo food should taste good too. These muffins not only taste good they are healthy too. They have healthy fats from the coconut oil, flaxseed, and almonds. The blueberries are full of antioxidants. They are sweetened with pure maple syrup and bananas. The coconut flour, nuts, fruit, and seeds have a lot of fiber. As far as I’m concerned all of these wholesome ingredients make them healthy. Plus, for a Paleo muffin, they taste great. You need to give them a try.
9. Simple Blueberry Muffins – Paleo Running Momma
Eggs – Almond Butter – Maple Syrup – Vanilla – Almond Flour – Tapioca Flour – Real Salt – Blueberries
This is a pretty simple recipe, yet they have a classic flavor and texture. You won’t believe they are Paleo. You’ll be surprised how easy they are to make and how quickly they’ll disappear. They were ready to eat in less than 30 minutes. They can be made ahead of time and taste great when made up to 3 days after if they are covered when they’re stored in the frig or even at room temperature.
