As I have mentioned before, it drives me nuts that food manufacturers write gluten-free on every food label whether or not the product is naturally gluten-free like a package of fruit or vegetables. Cookies are one food item that usually naturally have gluten in them so it can be more difficult to find gluten-free cookie recipes.
There are basically three different ways to make a cookie gluten-free. One way is to buy a package of gluten-free flour which is usually a combination of gluten-free grains, bean flour, and corn flour among other possibilities.
The second way is to make cookies with alternative flours, like almond flour and coconut flour which are the most popular gluten-free flours although there are many other kinds of gluten-free flour . The third way to make a cookie gluten-free is to make it with no flour at all.

It’s hard to know which kinds of flour you like the best without experimenting and trying several different kinds. Know that you should never substitute one kind of flour for another kind of flour in these or any gluten-free recipes.

For example, coconut flour soaks up a lot of moisture so a coconut flour cookie recipe may call for only 1/2 cup of flour whereas an almond flour cookie recipe may call for 1 1/2 of flour.
