You may think I’m crazy, but I actually own three crock pots. The main reason I have so many is so I can make bone broth in one all the time, one for the main dish and one for the side dish. Plus, I come from a large family and it’s nice to have a few extras around for family parties or to loan to family and friends.

I like this because it has the veggies, meat and sauce all in one pot. It is so easy to make and ends up having a tangy and sweet flavor. It has good wholesome ingredients. I like to change it up sometimes and add different vegetables. Almost any veggie will work but my favorites are green beans, snap peas, sweet potatoes and butternut squash. You may want to serve it over cauliflower or something like that.
This chicken in this recipe is really good and really simple, especially if you use pre-made salsa. It’s so easy to make and you can choose how long to cook it and what to ingredients to use. You can either cook it on high for 8 hours or low for 4-5 hours. It comes out great either way. It’s a personal preference. It just depends on your time and circumstances.
I absolutely crave this chicken curry a lot. It is so flavorful and the chicken is very tender when it is cooked in the crock pot. I chose chicken curry to be one of the recipes that I like to simplify and make it more Americanized. This is a traditional Thai dish but I changed it to cook it in the crock pot and I think it’s truly awesome. We eat it a lot at out house.
