Cauliflower Cake Recipe with Maple-Glazed Bacon & Figs {Paleo, Gluten-Free, Clean Eating, Dairy-Free}

Make something unexpected for your Paleo brunch with this cauliflower cake recipe. The smooth cauliflower dough combined with the smoky flavor of the bacon and the sweetness of maple syrup and figs make a delicious pop of flavor with every bite.



  1. Preheat oven to 450F (200C) .
  2. Grease a baking tin (I didn’t need to)
  3. Brush the bacon strips with the maple syrup and cook for 10 minutes until crispy and golden
  4. Meanwhile, place the cauliflower florets in a food processor. Pulse until chopped and it looks like cauliflower rice.
  5. Transfer the cauliflower rice to a large bowl, then stir in the coconut flour, baking soda, egg whites, egg and maple syrup and combine all together.
  6. Spoon the mixture into the baking tin and smooth the top.
  7. Turn the heat down to 375F (190C) and bake for 10 minutes. Then, reduce the temperature to 350F(180C) and bake another 50 minutes until risen and cooked through.
  8. Remove from the oven and top with the figs slices and the maple-glazed bacon.
  9. Serve warm or at room temperature. Enjoy!
