Main Dish Paleo Chicken Salad Recipes
1. Artichoke & Asparagus Chicken Salad – My Natural Family
This is a good example of a salad for a main dish that will fill you up and maybe even help you lose weight. I love main dish salads because I don’t have to make anything else. Just the salad and it’s a full meal. So easy. I especially the the asparagus and artichoke. After eating this you may even become a believe in asparagus an artichoke hearts.
2. Cilantro Lime Chicken Fajita Salad – My Natural Family
Limes – Cilantro – Chicken Breasts – Onion – Yellow Bell Pepper – Romaine Lettuce – Avocado – Cherry Tomatoes
This is one of my most popular recipes – and for good reason. The chicken is delicious and it tastes just like a fajita, but you don’t even miss the tortillas because of the delicious sauce. Lots of times we have served it without the lettuce just as BBQ chicken with a sauce and fajita vegetables on the side and my whole extended family loves it and requests it. And we can eat what everyone else is having without feeling like we’re eating something different. Some times we even serve it with normal people things, like either tortillas, sour cream, cheese, etc. so people can make their own fajitas or just as BBQ chicken and we have other people bring sides.
3. Oriental Chicken Salad – My Natural Family
This is a really good standby when you need a good easy and light meal. It would be great for lunch or dinner. It can be made for twenty people or just one. I made the dressing with sesame oil to give it a little Asian flair plus some extra flavor. You are supposed to use fresh mandarin oranges or you could use Halo oranges. I have used canned mandarin oranges, they aren’t technically clean because they have a little added sugar. I just drain the juice off and rinse the oranges and hope that I get rid of most of the sugar.
4. Rainbow Grilled Chicken Salad and Raspberry Walnut Dressing – A Calculated Whisk
This beautiful salad represents all of the colors of the rainbow. It comes with a dairy-free, creamy raspberry walnut dressing recipe plus it’s really quick to prepare. It would be really fun to make it for an outdoor BBQ party so you can show off how pretty it is.
5. Chicken Fajita Salad – Every Last Bite
Jalapenos – Lime Juice – Honey – Cilantro – Chicken Breasts – Red Onion – Bell Peppers – Lettuce – Jalapenos – Avocado – Lettuce – Cherry Tomatoes – Salsa – Recipe says vegetable oil, use a Paleo approved oil such as Olive Oil
There are so many Mexican flavors packed into this chicken fajita salad. The flavor of the tender chicken slices and the roasted vegetables coated with all the spices make it wonderful. It’s hearty and warm and healthy and totally nutritious. It makes a great meal for anytime.
6. Rosemary Grilled Chicken & Peach Salad with Pecan Vinaigrette – Get Inspired Everyday
You need to make this salad for no other reason than the dressing is to die for. You can make extra batched of it and keep it in the refrigerator and put it on all your salads. If you can’t find nice ripe peaches you can substitute, grapes, tomatoes, raspberries, strawberries or anything else like that you can find.
7. Grilled Veggie & Grilled Chicken Salads with Tomato Vinaigrette – Lexi’s Clean Kitchen
This salad is loaded with tons of grilled veggies, perfectly grilled chicken and a delicious vinaigrette tomato-based dressing. It’s the perfect to make a quick healthy dinner you can just throw together without even turning the oven on. The dressing has become a favorite.
8. Autumn Cobb Salad – A Saucy Kitchen
This is a delicious autumn cobb salad. It’s called that because of the fruits and veggies that are so abundantly found in the fall. Apples and sweet potatoes especially are so much more fresh in the fall when they have just been picked. It’s fall right now and I just decided I have to go find some fresh apples at the fruit stand down the street.
9. Mediterranean Salad with Hummus Dressing – Get Inspired Everyday
This is a wonderful salad with marinated oregano grilled chicken and a bunch of fresh vegetables. You could get your vegetables from the store, your garden or maybe a local farmer’s market. It’s topped off with a hummus dressing. Don’t panic, there isn’t any garbanzo beans in it. The dressing just has all of the other stuff that gives hummus it’s wonderful flavor. You’ll fall in love with it.
