I have a whole bunch of Keto recipes below but first I want to talk about why the Keto diet works.
The Ketogenic diet has been practiced since the 1920's. It's based on a solid understanding of nutrition science and physiology and works for a good percentage of people.
It targets several underlying causes of weight gain, including the cycle of binging and restricting empty calories, high blood sugar levels, insulin resistance, and hormonal imbalances.
You will likely find that you feel full and satisfied between meals and don't feel the need to snack, binge-eat or have dessert. You will also hopefully lose your sweet tooth and get used to eating less food as you eat more nutrient-dense food that leaves you feeling more satisfied.
You don't have to rely on limiting portion sizes, counting calories, or resorting to extreme exercise to lose weight. (How refreshing!)
The Keto diet takes a different approach to health improvement and weight loss. It changes the fuel source and that's why it works. The body needs fuel to stay energized - such as burning sugar. If your body has no sugar to burn, it burns fat.
Your body will get to a state of ketosis by making the switch from eating sugar to eating fats. Rather than your body being a sugar burner, it will become a fat burner. It's actually rather simple:
- First of all, cut down on carbs.
- Eat more healthy fats.
- Your body is now forced to burn fat and you will produce ketones.
- When the ketones get up to a certain point, you enter into ketosis, or "fat-burning mode."
The result can be fairly quick, consistent weight loss. It doesn't work for everyone and the number of carbs that are needed to achieve ketosis varies from person to person.

This is crazy-easy to bake in the oven - it only takes about 12 minutes! It ends up with a nice crust on the outside and is tender on the inside. I love the easy sauce and it pulls together in a few minutes. My favorite way to make it is using the broiler and that results in an extra-crunchy crust, juicier insides and it cooks even faster than the normal method. It's kind of a chef secret way to get restaurant-quality salmon with no extra work and actually in less time.
