Casseroles are often chocked full of meat and vegetables and it’s pretty easy to make them without added carbs. Cheese seems to be a big part of many of these ideas too – so why not embrace it and enjoy it?

It’s silky and creamy because of the Parmesan and Ricotta cheeses. It’s full of flavor from the garlic, onions, fresh thyme and mushrooms. I think it would be good with some chicken on the side. It has a tender yet firm texture like great risotto rice is supposed to have.
