This is my favorite way to cook any kind of vegetables, anytime, anywhere. It’s practically the only way I’ll eat vegetables anymore unless I’m in a big hurry. My favorite vegetables to roast this way are summer squash and zucchini. My second favorite is green beans but almost any other vegetables are great too. I think carrots are good too. I think what really makes them taste good is the Kosher Salt I use, plus I always use freshly ground peppercorns. You don’t have to use the garlic or onions or peppers if you don’t want to. They just add different flavors. You can pretty much roast whatever you want and it’s all good.

It’s nice and firm, but not too firm. The crust is super easy to make and it only has a few ingredients. The topping is made with a slightly honey sweetened coconut cream. Look at how pretty that coconut cream is!

This crust is awesome. I mixed tapioca flour and almond flour together and it ended up having the perfect flaky texture. This pie would be perfect for a Thanksgiving or Christmas dinner or party. The filling is nice and firm. The meringue is sweetened with a little honey. The firmness of the filling and the fluffiness of the meringue contrast each other perfectly.
