Gelatin starts with collagen which is a protein. Collagen is important in connective tissue, bones, and skin. We actually have a lot of collagen in our bodies, more than any other protein. If you don’t have enough collagen in your body, it can cause problems with osteoporosis and skin wrinkles.
Collagen in food is mostly found in the tougher cut of beef that has more connective tissue than the more expensive cuts. We typically throw them away.
